Work and Brownies!!!

There were lots of projects that were completed at our house this weekend, in preparation for Andrew's Graduation/Send off Party next Saturday. Projects such as trim bushes, mow and weed whack, get rid of the hot tub, remove all of the furniture on the patio and sweep it and of course, the dreaded....weed the flower beds. Our kids were hating us by the end of the day on Saturday...it's all for a good cause, we kept telling them!!

The most important and excitingly yumified work was going on in my Mom's kitchen on Sunday. With the abundance of certain garden produce this time of the year, she felt called to make a HUGE pan of Chocolate Zucchini Brownies...and we GLADLY devoured them.....Thankfully, I have the recipe so I'll be happy to share it with you.......

Zucchini Brownies

2 c. sugar
1/2 c. oil
1 t. vanilla
2 eggs
2 c. shredded zucchini
2 c. flour
1/4 c. cocoa
1/2 t. baking soda
1 t. salt
Mix all in a 9x13....Bake at 350 for 25 minutes

Frosting:
6 T. butter
1 1/2 c. sugar
6 t. milk
1/2 c. chocolate chips
Boil all except chocolate chips for 30 seconds. Add chocolate chips and spread on bars. Enjoy!
